Egg color is determined by the genetics of the hens. The breed of the hen will indicate what color eggs she will produce.

All eggs shells start out white in hen and gain pigmentation (color) as they progress down the reproductive tract. Each breed of chicken has a different pigmentation to create the distinctive color of the final egg. Chickens that lay brown eggs deposit brown pigment on the surface of egg just before it is laid.

Do different chicken egg colors taste different?

No. All chicken eggs are made the same on the inside. Egg tastes change because of a hen’s diet and the egg’s freshness.
